PAIRING
Pair with Ink Wheel rice bowls, soup bowls and side dishes. Serve wet dipping sauces separately, and combine this low main plate with deeper bowls to vary the height of the setting.
The 26.5 × 17.5 cm rectangular plate uses a broad rim to define the main serving area, while its 3.4 cm height keeps the outline stable. Centre the food and preserve the rim as open space rather than using it to hold sauce.
Serve teriyaki chicken, salt-grilled fish or seared beef in the centre, with a little grated daikon and grilled vegetables. Keep the sauce within the central area.
Arrange sliced duck breast, sausage or baked vegetables in the centre. Keep the broad rim clean and add concentrated sauce only around the main ingredient.
Divide grilled chicken breast, grains and seasonal vegetables within the central serving area, leaving a simple border of open rim.
Combine a small meat patty, roasted potatoes and pickled cucumber in the centre. Serve sour cream in a separate dish.
